Recipe Amazing Indian Chicken Curry

List of Ingredients:
- 2 lime leaves finely chopped
- 4 whole lime leaves
- 6 lemongrass stalks finely chopped
- 1 small red chili pepper
- A small piece of ginger
- A small bunch of coriander, stems reserved and leaves chopped
- 3 Tbsp. tamarind puree
- 2 Tbsp. brown sugar
For the curry:
- 2 Tbsp. vegetable oil
- 14 ounces canned coconut milk
- 8 chicken thighs, cut in halves, skinless and boneless
- 3.5 ounces green beans
- Zest from 2 limes
- Juice from 2 limes
- Salt and pepper to the taste
- 2 mangos, chopped
- Jasmine rice for serving
Instructions:
1. Put chopped lime leaves, red chili, lemongrass stalks, ginger, brown sugar, tamarind puree and coriander stems in your food processor and blend everything well.
2. Heat up a pan with the oil over medium high heat, add this lemongrass paste, stir and cook for 3 minutes.
3. Add coconut milk, stir and bring to a simmer.
4. Add chicken, lime juice, lime zest, salt and pepper to the taste, stir, cover and simmer for 30 minutes.
5. Uncover pan and cook for 10 more minutes.
6. Add whole lime leaves, mangos and green beans, stir and cook 5 minutes more.
7. Add coriander leaves, stir, cook for 5 minutes, transfer to plates and serve with jasmine rice on the side.
