Recipe Indian Lamb Curry

It’s an authentic Indian curry you simply must try!

List of Ingredients:

  • A small piece of ginger chopped
  • 4 garlic cloves chopped
  • 2 Tbsp. grape seed oil
  • 2 yellow onions cut in quarters
  • 1 cinnamon stick
  • 1 tsp. cumin
  • 1 Tbsp. coriander
  • 1 tsp. turmeric
  • ½ tsp. fennel seeds
  • 10 ounces water
  • Salt and black pepper to the taste
  • 14 ounces canned tomatoes chopped
  • 26 ounces lamb legs chopped
  • 1 red chili pepper thinly sliced
  • A small bunch coriander finely chopped
  • Basmati rice already cooked for serving
  • Mango chutney for serving


Instructions:

1. Put water, onions, ginger and garlic in your blender and pulse well.

2. Transfer to a pan, heat up over medium high heat, cover and cook for 15 minutes.

3. Take lid off, cook for 5 minutes and stir.

4. Add the oil, stir and cook for 5 more minutes.

5. Add coriander, cinnamon stick, cumin, turmeric and fennel seeds, stir again and cook for 5 more minutes.

6. Add lamb, stir and cook until it browns a little bit.

7. Add tomatoes, salt and pepper to the taste, cover and simmer curry for 1 hour.

8. Add half of the coriander and the chili pepper, stir and cook for 30 more minutes.

9. Add the rest of the coriander, stir, transfer to plates and serve with basmati rice and mango chutney.
